2lbs long eggplants
2lbs tomatoes, mashed
1onion, chopped
2 garlic cloves, chopped
7oz gruyere, cut into thin slices
2oz grated cheese
Half cup parsley, finely chopped
2 tablespoons fine bread crumbs
1 teaspoon sugar
Half cup olive oil
Salt
Pepper

Cooking Time: --Cooking Directions: 

- Wash the eggplants, cut into slices length-wise, sprinkle with salt and leave for one hour the bitter juices to run off.
- Wash and dry. Place in a buttered baking dish and bake for half an hour in the oven, turning on both sides.
- Heat the oil in a saucepan and sauté the onion, garlic and parsley for five minutes, stirring continuously.
- Add the mashed tomatoes, sugar, salt and pepper and simmer for half an hour.
- Spread the sauce over the eggplants in the baking dish, sprinkle with the bread crumbs and grated cheese and cover with the gruyere cheese cut into thin slices.
- Bake in the oven at 400oF for 30 minutes, until the cheese has been melted.
- Serve hot.

2lbs leg of veal without bones
1lb tomatoes, mashed
2 onions, chopped
2 garlic cloves, chopped
2 tablespoons parsley, finely chopped
Half cup butter
1 cup red wine
2 tablespoons thyme
2 tablespoons flour
2 bay leaves
1/3 teaspoon cinnamon
5-6 pimento seeds
Salt
Pepper
 

Cooking Time: --Cooking Directions: 

- Cut the meat into cubes, sprinkle with the flour and sauté in a saucepan with the flour and sauté in saucepan with the butter for 5 minutes.
- Add the onions and the garlic and sauté these too, stirring well.
- Add the mashed tomatoes, wine, bay leaves, cinnamon, thyme, pimento seeds, parsley and salt and pepper and stir.
- Simmer for about 2 hours. During cooking time, stir the food at regular intervals and add a little wine or hot water if more liquid is needed.
- Serve hot with fried potatoes or plain white pilaf.

4-5 large zucchinis
5-6 eggs, lightly beaten
500 grams (1 lb 2 oz) feta cheese, grated
3 tablespoons butter 
Salt
Pepper
A home-made pastry 

Cooking Time: --Cooking Directions: 

- Top and tail the courgettes (zucchinis). Next, wash, grate them and season with salt and pepper. 
- Add the grated feta cheese, the melted butter, the eggs and mix. 
- Prepare the pastry as described on previous pages and roll out a pastry sheet.
- Line a buttered pan with the pastry sheet and spread the courgette mixture evenly.
- Bake in a medium oven for about 25 minutes, un¬til the top of the pie is golden.
- Before removing the pie from the oven bore holes into it with a fork to help liquid evaporate. 
- Let the pie cool, cut it into pieces and serve.

Lamb on the spit

1 lamb (20-25lbs)
5 tablespoons thyme
5 tablespoons rosemary
5 tablespoons oregano
Olive oil
Lemon
Salt
Pepper
 

Cooking Time: --Cooking Directions: 

- Remove the entrails from the lamb, leaving the kidneys.
- Wash both inside and out and leave to dry.
- Brush the inside with 3 spoons of herbs mixed with salt and pepper.
- Place the lamb on the roasting spit, running it from behind, through the head.
- Make sure the lamb is stretched out tightly and that its back does not form a hump.
- Tie the backbone to the spit with pieces of wire at regular intervals.
- Tie the neck in the same way.
- Sew the stomach up with string.
- Push the legs under the roasting spit secure the ankle bones together and tie them tightly onto the spit.
- In a bowl place the oil, remaining herbs, salt and pepper and lemon juice and mix together well.
- Carefully brush the lamb all over, preferably using a bunch of fresh rosemary.
Baking
- When the coals are hot enough, place the lamb on the highest notch of the spit and turn it quickly.
- After approx. one hour lower the lamb and turn it slowly.
- When the skin on the legs begins to split, lower the lamb even more and turn it even slower.
-  It will take about 3 to 4 hours for the lamb to roast, according to the size of the lamb and the heat given out by the coals.

400 g (14 oz) dried fava (broad) beans or yellow split peas 
1 litre vegetable stock 
Half teaspoon paprika
Half teaspoon chili powder
Quarter teaspoon baking soda 
Quarter teaspoon salt
Half cup finely chopped fresh dill
2 tomatoes, finely chopped 
1 green bell pepper, seeded and finely chopped
1 small onion, grated 
4 tablespoons dry bread crumbs 
All-purpose (plain) flour, for dusting
Vegetable oil, for deep-frying
 

Cooking Time: 20 minutesCooking Directions: 

- Put the split peas into a pan, pour in the stock, and bring to a boil. Simmer for 45-60 minutes, until they are very soft and all the liquid has been absorbed.
- Remove the pan from the heat. Combine the cooked peas, paprika, chili powder, baking soda and salt in a bowl. 
- Add the dill, tomatoes, bell pepper, onion, and bread crumbs and mix well. Form the mixture into bite-size balls and chill in the refrigerator for 30 minutes. 
- Spread out the flour on a shallow plate and roll the balls in it to coat, shaking off any excess, then flatten slightly. 
- Heat the oil in a deep-fryer to 35°-3750f: (l80-i90°C). Add the croquettes, in batches if necessary, and deep-fry for 5-10 minutes, until golden brown. 
- Drain well and serve immediately.

1lb spring onions
4 large lettuces
Half cup dill, finely chopped
2 eggs
2 lemons
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon flour
Salt
Pepper
 

Cooking Time: --Cooking Directions: 

- Cut the meat into portions.
- Heat the butter and the oil in a saucepan and sauté the meat o n all sides for about 10 minutes.
- Add the salt and pepper and cut 2 cups of hot water and simmer for one hour.
- Cut the lettuce into strips and thinly slice the onions.
- Add these and the dill to the pan and simmer for another 45 minutes.
- In a bowl, beat the eggs well and gradually add the lemon juice.
- Remove the pan from the heat and slowly add the meat juices to the egg mixture.
- Beat well and then pour back in to a pan with the meat, taking care to cover everything.
- Return the pan to the heat for 2 minutes until it comes to the boil then remove and servse immediately.

2lbs long eggplants
2lbs tomatoes, mashed
2 large onions, chopped
6 garlic cloves, chopped
1 cup parsley, finely chopped
1 tablespoon sugar
1,5 cups olive oil
Salt
Pepper

Cooking Time: --Cooking Directions: 

- Wash the eggplants, cut off the stalks and score the skins length-wise down the middle, sprinkle with salt and leave for one hour.
- Rinse, dry and fry briefly in a cup of oil.
- When soft, remove from the pan and place in a baking dish.
- In the same pan, sauté the onions and the garlic.
- When browned, add the parsley, half of the mashed tomatoes, the sugar, salt and pepper.
- Leave to simmer for five minutes.
- Stuff the eggplants with the mixture. Pour over the remaining tomatoes and the rest of the olive oil.
- Bake in a preheated oven at 475oF for about 45 minutes.

500g (1 lb 2 oz) dried lima (butler) beans, soaked for 24 hours in cold water to cover and drained
2 celery stalks with leaves 
1 carrot
5 black peppercorns 
15Ο ml olive oil 
1 large onion, grated 
5-6 garlic cloves, thinly sliced
l kg (2 ¼ lb) ripe tomatoes
1 teaspoon sugar Salt
Pepper
Half cup finely chopped fresh parsley
2 Pork sausages, cut into bite-size pieces (optional)
2 beefsteak (large) tomatoes, thinly sliced into rounds 
Pinch of dried oregano
 

Cooking Time: 1 hour Cooking Directions: 

- Put the beans in a large pan, pour in water to cover, and add the celery, carrot, and peppercorns. 
- Cover and bring to a boil, then reduce the heat, and simmer for about 1 hour, or until the beans are just tender. 
- Drain and place them in an ovenproof dish. 
- Preheat the oven to 350°F (l8o°C/Gas Mark 4). 
- Meanwhile, heat half the olive oil in a pan. Add the onion and garlic and cook over low heat, stirring occasionally, for about 5 minutes, until softened and translucent. 
- Push the tomatoes through a strainer into a bowl or process to a puree in a food processor, then stir into the pan together with the sugar, and season with salt and pepper. 
- Remove from the heat and stir in the parsley and sausages, if using. Pour the sauce over the beans and arrange the sliced tomatoes on top. 
- Season with salt and pepper, sprinkle with the oregano, and drizzle the remaining olive oil over the surface. 
- Bake for about 1 hour, until the beans are tender and the sauce has reduced. 
- It may be necessary to add some hot water during baking. Serve warm or at room temperature.

8 eggs
1 kilo (2 lbs 4 oz) flour
1 wine glass ouzo
1 teaspoon baking soda or baking powder
Juice of half a lemon
250 grams (9 oz) walnut crumbs
2 teaspoons cinnamon crumbs
2 teaspoons cinnamon powder
Refined oil for frying
SYRUΡ
2 teacups sugar
1 teacup honey
2 glasses water
A stick of cinnamon 
 

Cooking Time: --Cooking Directions: 

- Beat the eggs in the mixer for 5 minutes. Add the ouzo, the baking soda (or baking powder), the lemon juice and the flour. 
- Remove from the mixer and knead by hand until you have a tough dough. Cover the dough and let it stand for two hours. 
- With a rolling pin roll the dough out into very thin leaves. Cut the leaves into square shapes. 
- Press the edges of the squares together with your fingers so as to form bows.
- Heat the oil in a frying pan and fry the «pleats» on both sides, until they are golden brown. 
Place the sweet pleats on a tray and prepare the syrup as follows: 
- In a pot, place the sugar, the honey, the water and the cinnamon and boil for 15 minutes. 
- Pour the syrup over the pleats and sprinkle with walnuts and cinna¬mon. 
- Serve cold.
